So anyone who knows me well enough can give testament to the fact that I have a special, spiritual, inseparable relationship with chicken. I could tell you some really comprehensive facts about the meat, the bones, the cartilage, the feet, everything! Without sounding too outlandish – It is, in my opinion, simply one of the most versatile, effortless, and consistently tasty meats out there, and who can blame me (as well as many others like me) for appreciating that?
I also love avocado. And I love bacon (whelp). So why not combine each of these into one spectacular, mouth-watering dish? In a few minutes I will show you how I prepare this quick, restaurant-quality meal (which is also a healthy option for those watching their calories), and hopefully you will add it to your list of meals too!
What you will need
- 1 avocado
- 1 tomato
- 1/4 red onion
- 1/2 red/yellow pepper (optional)
- Sprinkle of coriander
- Sprinkle of paprika
- Lemon/Lime juice
- Salt & Pepper
- Two chicken breasts
- Bacon
Method
Peel avocados and cut into small cubes. Chop onion and tomato into small blocks. In a bowl, mash avocado, onion, tomato together. Add salt, pepper, paprika, and coriander. Squeeze in lemon juice
Here’s where it gets fun. Horizontally cut each chicken breast in half, leaving a ‘pocket’ to stuff the guacamole into. If you are feeling spicy, you’re welcome to rub some seasoning over the breasts before you stuff them. The ingredients above are enough to fill at least 3 chicken breasts.
Now, wrap up each breast with as much bacon as needed. I only used two pieces per breast this time around because my greedy self had bacon for a snack the day before and that’s all I left behind 😦
Bake the chicken at 180 degrees for about 45 minutes. And you’re all done! Pro Tip: I sometimes fry it all up at the end to give it a more appetizing, golden brown finish.
Sides
This is quite a filling dish, so I recommend going with a lighter side dish such as a salad or steamed vegetables. Another option is to pair it up with baked potatoes, as I did.
